Monday Menu Plan

I wish I shared with you my menu planning for last week- I had an awesome week of cooking and tasting.
Monday was a light alfredo sauce over fettucine, spinach, and seared scallops.
Tuesday was a Quiche
Wednesday was Chicken Marsala Pasta [my first time making marsala sauce and it was so easy and tasty!]
Thursday I made Jamacian Jerk Chicken with a Sweet Potato, Corn and Bacon Salad and the sweet potato salad was a HUGE hit so try it and you won't be disappointed.
Friday I made Chicken Saltimbocca with asparagus- Cyrus was so wowed by tasting dinner that he declared that I was beautiful- proof once again that you can win any male heart through his stomach
Saturday- Dan and I made Chili.
Last night I made baked potatoes and we loaded them up with Chili, bacon, broccoli, sour cream, and cheddar cheese.



So this week:
Monday: Stuffed Shells with a homemade red sauce
Tuesday: Roast with vegetables in the crockpot
Wednesday: Leftovers
Thursday: Teriayki Salmon with Noodles and a spinach salad
Friday: Salmon with a Vodka Lemon sauce over Noodles with asparagus [Cuisine at Home Pasta Edition recipe]
Saturday: Pizzas: BLT and canadian ham and pinapple
Sunday: Some kind of Chicken Curry

Monday Menu Plan


I am baaaaacccckkkk!

Monday: Sweet Potato and Black Bean Cakes and fish tacos.

Tuesday: Curried Chicken Salad Waffle Sandwich except I'll be using Greek Yogurt with real lemon juice squeezed in it and a tad bit of sugar to cut down the sour slightly.

Wednesday: Pork in the crockpot to make shredded pork tacos.

Thursday: Leftover shredded pork with bbq sauce to make pulled pork sandwiches served with coleslaw.

Friday: Tuna melts with cucumber slices

Saturday: Chicken and Barley Soup which is basically a chicken noodle soup but barley instead of noodles.

Other items: Gluten-free Banana Bread

V-day


Another Valentine's Day has come and gone...
We were reminded that this holiday was looming when Dan tried to make plans with his friends to make up a birthday the weekend before on Saturday only to be told "Dude, I can't do anything Saturday. It is Valentine's Day" Oooh...
That is my very romantic husband.
So he and the guys went out Friday night.
The kids have been clammoring to see the "Move It, Move It" movie which is better known as Madagascar 2 and we took them to see it at the 2nd time around theatre [I should have checked to see if it was out on dvd which it was *sighs* but the whole dark theatre with popcorn was fun]. Then I wasn't up to handling sugar and not making Valentine treats so I took Dan and the boys to a bakery so they could pick out their treats.
We got a Valentine box from Mimi which we all enjoyed.
Dan and I watched the movie Fireproof after the kids went to bed...
Happy Valentine's Day everyone!
Well Friday is our closing date and we're uncertain. There were some last minute information requested and it took Dan a week to get to turning it in as he worked 10 days in a row so hopefully it everything works out for Friday. And hopefully we can move this Saturday... I'll post and call when we know for sure.

Monday Menu Plan


I got off track with last week's menu plan. I completely forgot that I was picking up my Grandma Wednesday to spend a few hours with her before handing her over to some other family members for her visit in Oregon so I didn't have enough time to make Shepherd Pie so we had Trader Joe's Carne Asada tacos. Carbonara Pasta Thursday and Solomon said I shouldn't have to cook Friday so leftover Carbonara Pasta. Dan ask for Steaks for Valentine's Day which I served with green beans and sweet potato baked fries. So that pretty much brings us to this week:

Monday [Happy Presidents' Day!]: Roasted whole chicken, mashed potatoes, and steamed carrots with brown sugar topping. Making banana nut muffins for this week's breakfast.

Tuesday: Making a chicken and rice soup with the chicken carcass for lunches. Using the leftover mashed potatoes for the Shepherd Pie.

Wednesday: I will be driving down to Eugene to pick up Grandma- we'll have lunch down there. We'll pick up Dan from work and go out to dinner.

Thursday: Pork butt roast in Shredded Pork or Beef Taquitos but Thursday is interesting as we are dropping off Grandma at the airport by 4pm as her plane takes off around 5:40pm so I don't know how well this plan will work. Frozen pizza is the backup plan.

Friday: Taquitos or leftover Taquitos with rice and beans. Hopefully we close on our house on Friday...

Saturday: Hopefully is a moving day and therefore the popular moving choice of Pizza will work.

Sunday: Whole Roasted Chicken, sweet potatoes, rice, and salad.

Perfect day... to be indoors


It snowed today... Not very much but nutherless cold and wet.
The only thing to do is to hang out at the mall with Cyrus and have hot chocolate while watching a movie- just love weather like this...
