V-day


Another Valentine's Day has come and gone...
We were reminded that this holiday was looming when Dan tried to make plans with his friends to make up a birthday the weekend before on Saturday only to be told "Dude, I can't do anything Saturday. It is Valentine's Day" Oooh...
That is my very romantic husband.
So he and the guys went out Friday night.
The kids have been clammoring to see the "Move It, Move It" movie which is better known as Madagascar 2 and we took them to see it at the 2nd time around theatre [I should have checked to see if it was out on dvd which it was *sighs* but the whole dark theatre with popcorn was fun]. Then I wasn't up to handling sugar and not making Valentine treats so I took Dan and the boys to a bakery so they could pick out their treats.
We got a Valentine box from Mimi which we all enjoyed.
Dan and I watched the movie Fireproof after the kids went to bed...

Well Friday is our closing date and we're uncertain. There were some last minute information requested and it took Dan a week to get to turning it in as he worked 10 days in a row so hopefully it everything works out for Friday. And hopefully we can move this Saturday... I'll post and call when we know for sure.

Monday Menu Plan


I got off track with last week's menu plan. I completely forgot that I was picking up my Grandma Wednesday to spend a few hours with her before handing her over to some other family members for her visit in Oregon so I didn't have enough time to make Shepherd Pie so we had Trader Joe's Carne Asada tacos. Carbonara Pasta Thursday and Solomon said I shouldn't have to cook Friday so leftover Carbonara Pasta. Dan ask for Steaks for Valentine's Day which I served with green beans and sweet potato baked fries. So that pretty much brings us to this week:

Monday [Happy Presidents' Day!]: Roasted whole chicken, mashed potatoes, and steamed carrots with brown sugar topping. Making banana nut muffins for this week's breakfast.

Tuesday: Making a chicken and rice soup with the chicken carcass for lunches. Using the leftover mashed potatoes for the Shepherd Pie.

Wednesday: I will be driving down to Eugene to pick up Grandma- we'll have lunch down there. We'll pick up Dan from work and go out to dinner.

Thursday: Pork butt roast in Shredded Pork or Beef Taquitos but Thursday is interesting as we are dropping off Grandma at the airport by 4pm as her plane takes off around 5:40pm so I don't know how well this plan will work. Frozen pizza is the backup plan.

Friday: Taquitos or leftover Taquitos with rice and beans. Hopefully we close on our house on Friday...

Saturday: Hopefully is a moving day and therefore the popular moving choice of Pizza will work.

Sunday: Whole Roasted Chicken, sweet potatoes, rice, and salad.

Perfect day... to be indoors


It snowed today... Not very much but nutherless cold and wet.
The only thing to do is to hang out at the mall with Cyrus and have hot chocolate while watching a movie- just love weather like this...

Menu Plan for week- a day late



Monday- we had Chicken and Dumpling Soup and a shocker was that Cyrus ask for seconds! Makes me want to make it every day of the week.

Tuesday- Sweet Potato and Lentil Curry over rice [it is adapted from this recipe but I am using brown lentils, sweet potato instead of carrot and spinach]

Wednesday- Shepherd's Pie

Thursday- Chicken Carbonara [third week in a row but requested everytime plus Cyrus actually eats it]

Friday- I am torn between Chicken Soup with Brown Rice and Ginger or Thai Chicken Soup...

Saturday- Cajun Fettucine [shrimp has been requested and this is very similar to Chicken Carbonara] and a little hot! for Valentine's Day. Smores Truffles and Velvet Cupcakes with cream cheese frosting for dessert...

Two months...

While busy with daily life and working on getting a house for our family time was flying by...
Today February 5th marks two months left before Dan leaves for training and then is overseas for his deployment.

Life

Remember when I told you one of my top favorite television show is Life on NBC back on tonight with all new episodes. Finally...

And I am going to miss it. I will be enjoy a mom/women night out playing with glass at a glass fusing studio! I'll take my camera to post about it tomorrow.

Finally things are moving along and hopefully we'll soon be moving ourselves...
We got our appraisal and we'll have $4,000 instant equity- Whoo hoo!
All the paperwork is done except for the last review and soon we should close and move! We're hoping to move next weekend so wish us the best with that.

[Cyrus drew the above picture- it is our house with rain falling on it- we do live in Oregon- Dan is playing a video game with Solomon inside the house and the big creature in the middle is "Iggy" our pet lizard. Apparently Cyrus and I are going on an errand- probably to the grocery store where Cyrus can try to get a treat]

In other sort-of-related-news we are not getting a tax refund so gift certificates for paint, IKEA, toilet, and Best Buy [where we plan on getting our fridge and dishwasher] would make lovely housewarming gifts *hint hint* For more exciting news we won't be able to get our big dining table until next year so the boys are excited about the big empty dining room to play in the meantime...

Monday Menu Plan



Monday (tonight): Since Pasta has been such a big hit we're having pasta noodles with a meat sauce and salad.

Tuesday: Fish, wild rice, and sweet potato fries [although baked and not fried]

Wednesday: Curried Sweet Potato Soup for lunch and leftover. Marinated Flank Steak, Carmelized Onions and Cheddar Quesadillas with rice and beans for dinner.

Thursday: Continuing on with my Mexican food craving is Shredded Pork or Beef Taquitos, with coleslaw, rice and beans.

Friday: Leftover shredded pork or beef with Corn Fritters

Saturday: Leftovers

Sunday: Chicken, broccoli or cauliflower [depending on grocery store prices] stir fry with peanut sauce over rice...

Superbowl

Hope everyone had a great time watching the Superbowl...

Like a girl I was cheering on the pretty little red birdies... The Cardinals came so close to wining- I wish they had.

Dan worked yesterday so the boys and I started watching it together then during halftime- Dan came home and we drove over to friends' house where my camera didn't take pictures of their cute baby but here is one of Cyrus giving the dog some tummy rubbin' ...
